We’ve all heard from experts, physicians, friends and family about the benefits of eating healthier and leading an active lifestyle. Unfortunately, if these aren’t habits you picked up at an early age, they can be harder to develop later in life.
But with the help of La Semilla Food Center’s Edible Education and La Cosecha programs, students and community members of all ages in southern New Mexico and El Paso are not only learning the benefits of gardening, they are getting hands-on experiences growing, cultivating and cooking fruits and vegetables.
The Edible Education program is funded through a partnership with the Paso del Norte Health Foundation’s Healthy Eating and Active Living (HEAL) Initiative. One of the initiative’s core objectives is to increase fruit and vegetable consumption and improve portion control in the Paso del Norte region.
Studies show that regardless of weight, a high-quality diet, including fruits and vegetables, can combat many chronic diseases, including cardiovascular disease, Type 2 diabetes and some cancers. Despite these factors, many people don’t consume the recommended amount of fruits and vegetables. Less than 25 percent of Americans eat fruits and vegetables and that number is even smaller in our region.
According to La Semilla’s Director of Operations, Krysten Aguilar, most people want fresh, healthy food, but in impoverished and minority communities, those things simply aren’t as accessible.
La Semilla has partnered with 30 schools and served over 4,000 students in four school districts throughout southern New Mexico and El Paso to train teachers on incorporating school gardens and cooking activities in the classroom and provide support to the schools to establish and maintain school gardens. The Edible Education curriculum combines garden-based lessons and classroom cooking activities that expose students to the wonder of growing, preparing and enjoying fresh healthy food with recipes like Minty Melon Medley and Lettuce Leaf Tacos.
Aguilar says she hears back from many teachers and parents who say their children become more open to eating healthy food and are invested and excited about growing their own. They even take those ideas home and start their own gardens.
They’ve also led more than 100 La Cosecha workshops with 11 community garden leaders; helped hundreds learn how to plant their own garden in their gardening workshops; held summer camps, which helped kids cultivate their green thumb; and much more.
Simply hearing about the benefits of healthy living and active living isn’t enough. Through programs like La Semilla’s school and community gardening programming, people are now learning how to put those ideas into action by growing their own fruits and vegetables and adding them to their daily food routine. And others are seeing family and community members grow their own gardens and asking how they can join in. With continued progress, changing the overall health outcomes in the Paso del Norte region can be possible.

Are there benefits to eating organic foods?


Eating organic food is associated with healthy eating, as people who choose organic also tend to pay attention to their nutrition in general. Whether you choose organic or conventional produce, know that including plenty of vegetables, fruit and whole grains in your diet is the best way to build a healthy diet.
Until 2001, “organic” was a loose term farms and grocery stores could use without regulatory oversight. Today, however, the National Organic Program regulates the production, handling, labeling and enforcement of all United States Department of Agriculture organic products, guaranteeing that all products labeled organic meet the same standards.
In general, organic foods are produced using only substances (both synthetic and non-synthetic) that have been approved, including additives and sweeteners. This includes no use of antibiotics, hormones, or genetically modified organisms. Instead, organic farming  practices include using natural fertilizers in natural environments. Organic meat comes from animals that are raised without antibiotics or hormones.
Researchers are still looking into what benefits organic foods could offer to consumers. Their results could especially interest cancer patients – a group of people for whom nutrition is a crucial consideration.
“Nutrition is a cornerstone of cancer therapy in terms of healing, stamina and recovery,” said Dr. Paul Bannen, an oncologist with Regional Cancer Care Associates. “People who pursue organic foods are likely to make better eating choices in general.”
Here are a few possible benefits being studied in organic foods with implications for healthy people and those facing serious health concerns.
Lowers pesticide exposure
Almost all conventional produce is treated with some amount of pesticides to increase production and lower crop loss due to insect damage. The limits on the amount of pesticide residue allowed on store-bound produce are considered safe by government agencies.
Produce labeled organic cannot have exposure to pesticides, so you would have a lower exposure to dietary pesticides when your diet is made up of primarily organic products.
Benefits the environment
Using farm land sustainably is an important part of making sure there is plenty of food available for future generations. Organic agriculture encourages healthy soil use and prevents harmful chemicals from leaching into ground water.
“Organic agriculture takes a proactive approach as opposed to treating problems after they emerge,” according to the Food and Agriculture Organization of the United Nations. For instance, it reduces non-renewable energy use, mitigates greenhouse and global warming effects and encourages biodiversity.

One of the most important ways to protect your health is to eat plenty of vegetables and fruits. These foods are full of the vitamins and minerals that support overall health and contain many compounds that have cancer preventive qualities.
“In foods like these, you’ll find important nutrients like vitamin A, which helps with eyesight and the immune system; vitamin C, which supports cell division; vitamin K, which helps with clotting; folate, which improves red blood cell production and cell division; and magnesium, which reduces the risk of diabetes and and vitamin D may reduce the recurrence  of certain types of cancer,” Bannen said.
Cancer patients may have a hard time getting enough nutrition when they don’t feel well, so it’s important that they get as much value as they can in what they are able to eat.
“I want them to eat good, sensible food,” Bannen said. “It’s important to maintain weight. Weight is an important indicator of how well a patient is tolerating treatment.”
Whether choosing organic foods or generally focusing on consuming plenty of plant foods, cancer patients and all people can take care of their bodies, the environment and future generations at the same time.
